So, we choose the grapes to use as staple to come from the most charismatic vineyards of Greece. To be well-tended, to be at the right time of maturity and, of course, balanced at appearance and taste.
At the same time, we look after the time and way of transport to the winery to be proper so that the grape keeps all its characteristics unharmed in order to pass to the vinification process.
